The word 'Shaam' means Syria. Shami Kebab has origins from Syrian Scholars who migrated to North India and brought with them their traditional meat kebabs.Yet again, Awadh refined it. Original syrian recipes were meat only and used spices and other flavourants scarcely. The Awadhi Shami kebab was invented when the royal Hakims adapted this recipe to include chana dal instead of only meat as the pure-meat kebabs were causing health issues to the Nawabs. Other spices were then incorporated in typical awadh style to make it delicate in both flavour and texture.
