While the first versions of the Indian Korma were prepared in Mughal kitchens (a version of it was also served on the inaugration of Taj Mahal in 1653), it was truly refined by the Awadh chefs.The Mughal Korma used tomatoes and dairy to create a heavy, dairy-dense and more savoury base for the dish. When adapted for Awadh royalty, there was a greater emphasis on subtle, more aromatic flavours, with a well balanced nuttiness to it. By this time, Awadh had also refined the art of Meetha Ittar (also called ittar-e-shireen) which are edible perfumes made specially for adding fragrances to food along with rich floral and earthy/woody depths when added to slow cooked meats. This is the signature of Awadhi Korma.The Awadhi Korma is also dum cooked as opposed to Mughal Korma which is slow roasted.
