The origin story of the dish centers on blending traditional Mughal Korma styles with the bold but warm kick of freshly ground black pepper, replacing the usual red chili powders. This resulted in an elegant, off-white, and fragrant preparation that highlighted the natural flavors of tender chicken. This was done because the Awadhi royalty had a preference for subtle, and delicate flavour profiles (Nazaakat) as opposed to the punchy food popularized in later mughal era kitchens. Another aspect is, Nawabi gourmands preferred curries that offered both distinct flavor and ease of digestion after heavy, multi-course meals. This was due to the heavy influence of Hakims/Vaidyas who were moving to Awadh from Delhi during the reign of Nawab Shuja-ud-Daulah.Kali Mirch (black pepper) served both purposes (distinct flavour & light on digestion) beautifully, and much better than red chillies. This mix of taste preference + mindful ingredient usage led to development of Chicken Kali Mirch in late 18th century
