How Did Shahi Serve Begin?
The year was 2022. Akshay had recently gone through a breakup and was visiting me in Bengaluru.
Like most important decisions in life, this one also began over a bottle of whisky.
At some point during the evening, we did what every Lucknowi eventually does when nostalgia takes over. We ordered kebabs. There was a Tunday outlet about fifty minutes away. The kebabs were good. But they weren't home. That led to a question that would eventually change our lives:
Why is it so difficult to find authentic regional Indian food outside the places where it originated? That night, two slightly intoxicated friends decided to open a kebab shop. By the next morning, we'd realized it was a terrible idea. Fortunately, the question survived.
Why Didn't We Open a Restaurant?
The more we thought about it, the more obvious the problem became.
Restaurants are difficult to scale.
Heritage food is even harder.
You can scale outlets.
You cannot easily scale craftsmanship.
